VitaFiber provides 3-in-1 functionality as a plant based prebiotic, fiber and lower-calorie sweetner. 
It is a high quality and high purity Isomalto-oligosaccharide (IMO) made from the enzymatic conversion of starch. 
VitaFiber is available sourced from peas, tapioca or organic tapioca starches and is available as a syrup or powder.

Applications include but are not limited to: sugar reduction in confectionery and chocolate formulation, nutritional bars, baked goods, beverages- premix powders and liquids, dairy and ice cream, savory sauces and more. 

Functionality: sugar and fat replacement, excellent binder, humectant, bulking agent, 100% soluble in water, high viscosity, browning effect, pH tolerance (2.0-9.0), heat tolerance 375 degrees Fahrenheit, Absence of major allergens including soy, nutts, eggs, lactose, gluten and sulfites.

It has a smooth mouthfeel and no aftertaste. 50%-60% the  sweetness of sucrose and great synergy with high intensity sweeteners such as stevia. .
