Used at 2-10% in the finished product, it may also masks off-flavors associated with soy.

Bakon® HFBN can be used in meats, meat emulsions, sausage, pork applications, soups, stews, snack foods, dry seasoning mixes, and vegetarian systems. Used at 0.5-3.0% in the finished product, it contributes a strong, bacon-like smoked flavor in addition to boosting the overall flavor profile of the system and may help to mask off-flavors associated with soy.

Hickory Smoked Torula Yeast

Conventional (Non-GMO)

Primary grown, dried whole cell torula inactive yeast. It is a specialty product range with the unique ability of delivering superb flavor carrier properties in different food applications, with distinctive savory notes and superior texture enhancement.

Lake States® production begun in 1948 in Rhinelander, Wisconsin. For over 50 years the site has been a leader in the development and commercialization of inactive dried torula yeast for the food industry, pharmaceuticals, industrial fermentations, animal feed, and pet food markets. Thanks to Lallemand investments, it is today the largest torula inactive yeast production site in the world.

The Lake States® products can be used to help to reduce the use of additives such as MSG and HVP. They are designed to impart savory notes, enhance texture and nutritional characteristics in foods. Sourdough Baking Cultures

Essential® Fresh is a new technology based on the post-baking application of live yeast to packaged baked goods. It is produced of a strain of “Saccharomyces cerevisiae”. The yeast remains viable on the surface of the product and creates a controlled atmosphere within the package inhibiting mold growth and extending shelf-life. The primary mechanism of Essential® Fresh extending mold-free shelf-life is based on this viable yeast converting residual ethanol to mold-inhibiting metbolites.

After baking, cooling, and slicing, and before packaging, a prepared solution of Essential® Fresh is sprayed on the surface of the product to inhibit mold growth to extend mold-free shelf-life.

Essential® Fresh can also contribute to an enhanced taste and aroma.

LalBrew® Verdant IPA was specially selected in collaboration with Verdant Brewing Co. (UK) for its ability to produce a variety of hop-forward and malty beers. Prominent notes of apricot and undertones of tropical fruit and citrus merge seamlessly with hop aromas. With medium-high attenuation, LalBrew® Verdant IPA leaves a soft and balanced malt profile with slightly more body than a typical American IPA yeast strain. This highly versatile strain is well suited for a variety of beer styles including NEIPA, English IPA, American Pale, English Bitter, Sweet Stout and Sours.

Philly Sour produces moderate amounts of lactic acid in addition to ethanol in one simple fermentation step. This first yeast in the WildBrew™ series is a great choice for innovative, sessionable sour beers with refreshing acidity and notes of stone fruit. With high attenuation, high flocculation and good head retention, WildBrew™ Philly Sour is an ideal yeast for traditional styles such as Berliner Weiss, Gose, American Lambic Style, American Wild Ales and its resistance to hops make it perfect for Sour IPA’s.

Sour Active Dry Yeast - WildBrew™ Philly

Kveik is a Norwegian word meaning yeast. In the Norwegian farmhouse tradition, kveik was preserved by drying and passed from generation to generation. Kveik is the original, traditional dried yeast! The LalBrew Voss™ strain was obtained from Sigmund Gjernes (Voss, Norway), who has maintained this culture using traditional methods since the 1980s and generously shared it with the wider brewing community. LalBrew Voss™ supports a wide range of fermentation temperatures between 25-40°C (77-104°F) with a very high optimal range of 35-40°C (95-104°F). Very fast fermentations are achieved within the optimal temperature range with full attenuation typically achieved within 2-3 days. The flavor profile is consistent across the entire temperature range: neutral with subtle fruity notes of orange and citrus. Flocculation is very high producing clear beers without filtration or use of process aids.

In addition to these traditional styles, Nottingham can be used to produce Golden Ale, Kölsch, Lager-style beers, IPA, and Imperial Stout, among many others. LalBrew Munich Classic™ is a Bavarian wheat beer strain that can easily express the spicy and estery aroma profile typical to German wheat beer styles. LalBrew Wit™ provides a baseline profile of banana and spice aromas, but leaves space for the brewer to showcase other spice additions typical of Belgian style beers. Lager Active Dry Yeast - Diamond™

LalBrew CBC-1™ has been specifically selected from the Lallemand Yeast Culture Collection for Cask and Bottle Conditioning applications due to its high resistance to alcohol and pressure. LalBrew CBC-1™ has a neutral flavor profile and does not metabolize maltotriose, therefore the original character of the beer is preserved after refermentation. The yeast will settle and form a tight mat at the bottom of the bottle or cask. LalBrew CBC-1™ is also well suited for primary fermentation of sweeter fruit beers or full-bodied, malty ales.
LalBrew CBC-1™ is also an ideal strain for primary fermentation of dry ciders, mead, and hard-seltzer. For simple sugar fermentations with appropriate yeast nutrition, LalBrew CBC-1™ achieves high attenuation with a clean and neutral flavor profile.

LalBrew BRY-97™ is an American West Coast-style ale yeast that was selected from the Siebel Institute Culture Collection for its ability to produce high quality ales. LalBrew BRY-97™ is a neutral strain with a high flocculation ability that can be used to make a wide variety of American-style beers. Through expression of a beta-glucosidase enzyme, LalBrew BRY-97™ can promote hop biotransformation and accentuate hop flavor and aroma. Traditional ales made with LalBrew BRY-97™ include but are certainly not limited to Cream Ale, American Wheat, Scotch Ale, American Pale Ale, American Amber, American Brown, American IPA, American Stout, Russian Imperial Stout, Imperial IPA, Roggen/Rye, Old Ale and American Barleywine.

Belgian Saison Ale Active Dry Yeast - Belle Saison™

LalBrew Abbaye™ is an ale yeast of Belgian origin. Selected for its ability to ferment Belgian style beers ranging from low to high alcohol, LalBrew Abbaye™ produces the spiciness and fruitiness typical of Belgian and Trappist style ales. When fermented at higher temperatures, typical flavors and aromas include tropical, spicy and banana. At lower temperatures, LalBrew Abbaye™ produces darker fruit aromas and flavors of raisin, date, and fig.
