Our malted rice is sourced from a gluten-free regenerative farm that focuses on soil health and grain quality. This farm produces some of the highest quality, lowest arsenic rice in the country while impacting the environment in a very positive way. 

Methods like year-round living roots, no flood irrigating, no tillage and cutting out harmful pesticides and fertilizers are key components. Every order will come with arsenic COA for the safety of you and your customers.

Malted Rice

Conventional (Non-GMO)

Malted Dehulled Rice, also known as malted rice or rice malt, are gluten-free rice grains that are soaked in water to initiate germination, then allowed to germinate for a specific period of time before being dried and kilned.

During germination, enzymes are activated within the rice grains which break down starches into simpler sugars. This enzymatic activity is essential for the production because it creates fermentable sugars that are crucial for fermentation in brewing and distilling processes.

Malted dehulled rice is commonly used as an adjunct in brewing beer and making spirits such as sake (Japanese rice wine) and other rice-based alcoholic beverages. It contributes gluten-free fermentable sugars, flavors, and enzymes that aid in the fermentation process and influence the final taste and aroma of the product.

Additionally, malted rice can also be used in cooking and baking as a flavoring agent or sweetener, adding depth and complexity to dishes. It can be ground into flour and used in recipes for bread, pastries, and desserts, or added to soups and stews for flavor enhancement.

Malted Dehulled Rice

We have Regenerative grown (soon to be verified) dehulled malted millet grown on our farm and processed in our dedicated Gluten-Free facility. It offers a crunchy, sweet, and bready character like breakfast cereal, a popular snack at the malthouse. It can be enjoyed on salads or in chocolate bars, offering endless possibilities. The grain is cooked at 200°F, cleaned, and passed through a metal detector before packaging.  Also offered stone milled; makes amazing pancakes!  

Malted Dehulled Millet

Only 200lbs currently available but will grow more if requested. This Red Amaranth has a protein content of around 18%. We are able to sprout or malt this grain too.

Malted Millet

Our Gluten-Free Malted Buckwheat is grown on our regenerative farm . While regenerative farming of buckwheat may not yield as much, we believe it's worth it to be stewards of the land and produce nutritious grains for a healthier consumer and environment.

Malted Buckwheat

Available fall of 2024.  Malted Blue Corn from Miller Malting are kernels that are germinated and then dried to produce this corn. The process converts the starches in the corn into fermentable sugars, making it suitable for use in brewing beer and spirits.

Malted Blue Corn can be used as an ingredient in the production of various alcoholic beverages, including craft beers, whiskies, and other spirits. It can contribute unique flavors, colors, and aromas to the final product, imparting a distinct character that sets it apart from beverages made with other types of malted grains.

In addition to its use in brewing, Malted Blue Corn can also be used in baking and cooking to add flavor and texture to a variety of dishes. It can be ground into flour and used in recipes for bread, tortillas, muffins, pancakes, and other baked goods.

Malted Millet Flour is made from millet grains that have undergone the malting process. Malting involves initiating the germination process, then drying and roasting the millet to stop the process. Malting activates enzymes within the grains which convert starches into fermentable sugars and helps to develop complex flavors and aromas.

Malted millet flour can be used in brewing beer or making malted beverages. In brewing, malted millet flour can contribute fermentable sugars and flavor to gluten-free beer recipes.

Malted millet flour can be used to make gluten-free bread, rolls, muffins, and other baked goods. Its malty flavor and slightly sweet taste can add depth and complexity to gluten-free recipes.

Malted millet flour can also be used in cakes, cookies, and pastry recipes to add flavor and texture. It can be blended with other gluten-free flours such as rice flour, almond flour, or tapioca flour to create a well-balanced and flavorful flour blend.
