There are many varieties of oyster mushrooms; generally they have a mild, woody, earthy flavor. They can be slightly sweet, with a hint of anise, and they also have an umami flavor. Their name comes from their flat, round shape, which resembles an oyster. When prepared properly, an oyster mushroom is prized for their tender meaty texture that has been compared to chicken.
